Don’t submerge lobster in water or ice! Instead, simply keep in an open large container within your fridge, and cover with wet paper towel or cloth and keep wet and cold until you’re ready to cook.
Including how long it took to ship to you, live lobster can usually be kept for a maximum of two days as long as you have followed proper storage instructions.
If your cooked lobster is still in the shell, it can be kept in your fridge within a covered container for up to two days. If your cooked meat has been shucked, keep it in a covered container within your fridge for two to three days… if you can keep from eating it for that long!
Live lobster should never be frozen! For cooked meat (either shucked or still in their shells), submerge the full product within a mix of 1 litre of fresh water and 1/4 cup of salt, place in a sealed container or plastic bag, and freeze.
Place the frozen lobster in your refrigerator for 15-20 hours to have it naturally thaw slowly. If you placed the lobster and brine in a plastic bag, you can run it under running water for a faster defrost.
