PEI Lobster Fried Rice

Ingredients:

  • 1 1.5lb whole PEI lobster - blanched for 10 minutes in boiling salted water
  • 1 bunch green onions - chopped
  • ½ white onion - diced
  • 4 cloves garlic - chopped
  • 2 tablespoons ginger - grated
  • ¼ cup diced carrot
  • ¼ cup frozen peas
  • 2 eggs - scrambled
  • 2 cups - cooked white rice
  • 2 tablespoons soy sauce
  • 2 tablespoons hoisin
  • 2 tablespoons sesame oil
  • 1 tablespoon vegetable oil

Directions:

Method:
1.Once all your vegetables and lobster have been chopped, sliced and diced. Get a wok or a large sauté pan on medium high heat.
2.Next add your eggs and give them a quick scramble. Remove from the pan and set aside.
3.In the same wok or pan add your sesame oil, onions, and carrots. Allow those to cook for about a minute while stirring constantly. Then add garlic and ginger and continue to stir allowing everything to cook evenly.
4.Once the vegetables have been cooked down slightly you can add your lobster meat as well as your peas. Give them a good mix and let cook for 2 minutes to get everything nice and hot and evenly combined.
5.Then add your green onions, rice and again mix thoroughly.
6.Then we can add our seasonings, soy sauce, hoisin and last but not least the cooked scrambled eggs. Mix this really well for 2-3 more minutes and it’s ready.
7.Serve while hot and enjoy.

Lobsters will often get out of traps - that is part of the design. Traps are built to allow undersize lobster to exit easily. Plus an escape hatch is made of biodegradable twine in case the trap is lost at sea. Adult lobsters will also escape traps at times; it is just more difficult.
