PEI Lobster Avocado Toast

Servings: 4

Ingredients:

  • 4 oz PEI lobster
  • 2 Ripe avocados
  • 2 tsp fresh chives, finely chopped
  • 2 tsp lemon, freshly squeezed
  • Extra virgin olive oil, to taste
  • Sprinkle of sea salt
  • 2-4 slices of whole grain bread or baguette

Directions:

1. Cut avocado lengthwise, remove the pits, scoop out avocado and mash with a fork in a bowl with lemon and a sprinkle of sea salt
2. Arrange bread or baguette on a baking sheet and broil in the oven on high for 1-2 minutes until toasted, or use a toaster
3. Chop up PEI lobster meat into small pieces
4. Spread a thick layer of avocado mash on toast or baguette and top with PEI lobster and chives
5. Drizzle with olive oil
