Lobster Roll with Browned Butter + Chives

Servings: 4

Ingredients:

  • 1/2 cup butter
  • 4 lbs of PEI lobster, shelled & chopped (claws intact). Salt and pepper to taste
  • 4 split top hot dog buns
  • 1/2 cup iceberg lettuce, shredded
  • 2 tbsp chives, chopped

Directions:

In a small saucepan, melt butter over
medium low heat. Cook until dark golden
brown and frothy. Set aside and keep warm.

Brush each side of the buns with browned
butter. Toast on a grill or frying pan on
each side until toasted.

In a large bowl, toss together lobster and
remaining browned butter, seasoning
with salt and pepper to taste.

Fill each bun with lettuce and lobster,
topping with a claw and garnish with
fresh chives.
