Lobster, Avocado, and Feta Salad

Ingredients:

  • 1 Avocado, chopped
  • 1 Bunch spring mix greens
  • 8-10 grape tomatos, halved
  • 1/4 cup feta
  • 1 lemon, juiced
  • 1/2 cup olive oil
  • 1/2 tsp salt, to taste
  • 1/2 tsp pepper, to taste

Directions:

Step 1: Prepare the Lobster
1. Use seafood scissors to cut across the tail shell and claw shell of the cooked lobster.
2. Extract the meat and chop it into bite-sized pieces.

Step 2: Sauté the Lobster
1. Heat 1-2 tablespoons of butter in a frying pan over medium-high heat.
2. Sauté the chopped lobster meat for 5 minutes.

Step 3: Assemble the Salad
1. Start with a base of spring mix on a plate or in a bowl.
2. Add 1 chopped avocado and 8-10 grape tomatoes, halved.
3. Top with the sautéed lobster meat.
4. Crumble 1/4 cup of feta cheese over the salad.

Step 4: Prepare the Dressing
1. In a small bowl, combine the juice of 1 whole lemon and 1/2 cup of olive oil.
2. Add salt and pepper to taste.
4. Pour the dressing over the salad.

Step 5: Serve
