PEI Lobster BLT

Ingredients:

  • 1 1lb Prince Edward Island Lobster
  • 1 brioche bun, toasted
  • 1 avocado, sliced
  • 1 field tomato, sliced
  • 3-4 pieces leaf lettuce, cleaned
  • 4 strips bacon
  • 2 tablespoons honey
  • 2 tablespoons butter
  • 1 tablespoon plain mayo
  • 2 tablespoons salt
  • 2 tablespoons black pepper

Directions:

Method:
Blanch your Prince Edward Island Lobster in boiling, salted water for 6 minutes then shock it in ice water.
Remove your Prince Edward Island Lobster shells using scissors. Preheat your oven to 350f.
On a small tray lined with parchment paper, lay out 4 strips of bacon. Drizzle with honey and season with black pepper.
Put it in the middle rack of the oven and cook for approximately 10 minutes or until it begins to crisp.
Put a medium-sized, non-stick pan on medium heat. Add your butter and allow it to melt.
Add your brioche bun to the pan to toast as well as your sliced Prince Edward Island Lobster tail and claws.
Allow the bun to toast until golden brown and Prince Edward Island Lobster to warm up by cooking lightly for about 3 minutes per side.

Assembly:
Start with mayo on the bottom bun. Followed by lettuce, tomato, Prince Edward Island Lobster, bacon, avocado and a light layer of mayo for the top bun.
