PEI Lobster Linguine

Ingredients:

  • 8 oz cooked linguine
  • 8 oz shelled lobster meat
  • 2 oz cooked red pepper
  • 3 oz blistered cherry tomatoes
  • 2 oz sauteed chanterelle mushrooms
  • 3 oz green onions
  • 2 oz charred corn
  • 1 tbsp chopped dill
  • 6 oz roasted red pepper cream sauce

Directions:

1. Heat red pepper cream sauce, add linguine and lobster meat.

2. Simmer for 3-5 minutes until lobster meat is hot.

3. Add red pepper, tomatoes, mushrooms and corn. Mix until well incorporated.

4. Top with fresh green onion and chopped dill.

5. Serve!
