Butter vs Mayo Lobster Roll

Ingredients:

  • 2 1.25lb PEI lobster
  • 2 brioche buns
  • 2 oz butter
  • 1/4 tsp kosher salt
  • 1/4 tsp lemon juice
  • 2 tbsp mayo
  • 2 tbsp celery finely diced
  • 1/4 tbsp lemon juice
  • 1/4 tsp kosher salt

Prep time: 12 minutes
Poach time: 15 minutes

Ingredients:
Lobster
2x 1.25lb fresh Prince Edward Island Lobsters
2 brioche buns

Butter
2 oz butter
1/4 teaspoon kosher salt
1/4 teaspoon lemon juice

Mayo
2 tablespoons mayo
2 tablespoons celery, finely diced
1/4 teaspoon kosher salt
1/4 teaspoons lemon juice

Optional
500 chive rings
1 tablespoon fresh dill

1. Poach your lobster for 15 minutes then chill. Break down into bite size chunks.
2. Divide in two and dress one with butter and the other with mayo.
3. Toast the sides of your bun and stuff full.
4. Serve and enjoy!
