Lobster, Cheddar + Chive Biscuits

Ingredients:

  • 3.5 cups all purpose flour
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1 cup butter, frozen, reserve 2 tbsp
  • 1 cup buttermilk
  • 1 lobster, cooked, shelled, chopped
  • 1 cup white cheddar, grated
  • 1/4 cup fresh chives, minced
  • 1/4 cup fresh chives, minced

Directions:

1) in a large bowl, whisk together flour, baking powder, soda, sugar and salt.
2) grate most of the frozen butter into flour mixture and mix together.
3) add buttermilk and mix until combined.
4) roll dough into a large square. Add lobster, cheddar and chives and fold each side in like an envelope. Repeat this process 2 more times, adding lobster, cheddar and chives.
5) roll the dough into a large square and cut into squares.
6) place on a parchment lined baking sheet and brush with melted reserved butter.
7) bake at 425°F for 15-20 minutes or until top is golden. Sprinkle with salt and enjoy!
