Classic Lobster Sub

Servings: 4

Ingredients:

  • 4 lbs of PEI lobster, shelled, chopped
  • 1/4 cup mayonnaise, divided
  • 1 tsp lemon juice Salt, to taste Pepper, to taste
  • 4 leaves romaine lettuce
  • 1/4 cup dill pickles, sliced
  • 4 Kaiser rolls

Directions:

In a large bowl, mix together lobster,
2 tbsp mayo, lemon juice and salt
and pepper.

Spread remaining mayonnaise on
Kaiser rolls, and layer lettuce, pickles
and lobster mixture.

Wrap in parchment paper and bring to
your favourite Island picnic location.
