Lobster Cobb Salad
Ingredients:
- 10 oz chilled PEI lobster meat
- 2 cups of baby greens
- 2 oz avocado, diced
- 1/2 cup cooked corn kernels
- 1/2 cup cheery tomatoes, diced
- 2 hard boiled eggs, sliced
- 4 slices of bacon, crumbled
- 2 tbsp of goat, feta or blue cheese
- 1 tsp Dijon mustard
- 2 tbsp red wine vinegar
- 4 tsp olive oil
- ¼ tsp kosher salt
Directions:
Place greens in a large bowl
Add lobster, avocado, corn, tomatoes, eggs, bacon and cheese
In a bowl whisk together Dijon mustard, red wine vinegar, olive oil and salt for dressing
Drizzle dressing to taste
