Lobster Martini

Ingredients:

  • 8 oz. Shucked Lobster Meat
  • 3 oz. Deep Roots Honey of a Gin
  • 1 Tbsp. Fresh Cilantro Chopped
  • 1 Fresh Lime, Juiced
  • Cracked Black Pepper to taste
  • 2 Ripe Avocado, diced
  • ½ English Cucumber, thinly sliced rounds
  • 3 Tbsp. Rice Vinegar
  • 2 Tbsp. Honey of a Gin
  • 1 Tbsp. Honey
  • Salt and Pepper to taste
  • ½ Loaf day old Baguette
  • ¼ lb. ADL salted butter
  • ½ tsp. Ground Juniper Berry
  • 1 oz. Honey of a Gin

Directions:

For the Lobster:

8 oz. Shucked Lobster Meat
3 oz. Deep Roots Honey of a Gin
1 Tbsp. Fresh Cilantro Chopped
1 Fresh Lime, Juiced
Cracked Black Pepper to taste
2 Ripe Avocado, diced

Drain any excess brine of the lobster then place the drained meat in a bowl. Carefully break the lobster meat into smaller pieces while checking for any shell fragments or gills. Pour over the lobster, 3 oz Gin. Add the chopped cilantro, lime juice and cracked black pepper. Mix all ingredients together then cover and refrigerate. For the avocado, split them in half, remove pit. Scope the avocado from the shell. Place the avocado on a cutting board and coarsely dice. Place avocado in a bowl, cover and refrigerate.

For the Pickled Cucumber:

½ English Cucumber, thinly sliced rounds
3 Tbsp. Rice Vinegar
2 Tbsp. Honey of a Gin
1 Tbsp. Honey
Salt and Pepper to taste

Very thinly slice the cucumber and place in a glass bowl. Add remaining ingredients, toss together then cover and refrigerate.

For the Crostini:

½ Loaf day old Baguette
¼ lb. ADL salted butter
½ tsp. Ground Juniper Berry
1 oz. Honey of a Gin

Using day old baguette , thinly slice baguette and place on baking sheet.
Place butter in a small bowl, add ground juniper berry and gin. Place bowl with butter mixture in microwave and heat just until the butter is melted. Remove butter from microwave. Using a pastry bruise, stir butter mixture and brush butter on baguette slices, trying not to over butter and saturate.
Preheat oven to 350 degrees, place buttered baguette in oven and toast until golden brown, approximately 5 to 7 minutes. Remove from oven and set aside.

To Assemble the Martini:

1. Take lobster, cucumber and avocado from the fridge. Re toss the lobster in the gin mixture. Re toss the cucumber in the pickling mixture.

2. Using a martini glass or other vessel, spoon 2 oz of the lobster mixture int the bottom of the glass. After the lobster is in the glass, evenly distribute the gin liquid into each glass. Place 3 or 4 slices of the pickled cucumber on top the lobster. Next spoon the diced avocado onto the lobster. Place 2 or 3 crostini into the side of the glass, garnish with a small lime wedge.

3. I would serve the Martini with a small spoon or fork to help apply the lobster to the crostini. Don’t forget to drink the liquid at the bottom of the glass to finish!!

Lobsters will often get out of traps - that is part of the design. Traps are built to allow undersize lobster to exit easily. Plus an escape hatch is made of biodegradable twine in case the trap is lost at sea. Adult lobsters will also escape traps at times; it is just more difficult.
