Lobster Quiche

Servings: 6

Ingredients:

  • 2 lbs lobster, cracked, diced (save claws for the top)
  • 6 eggs
  • 1/2 cup heavy cream
  • 1/2 cup white cheddar, shredded
  • 1 package hollandaise, prepared
  • 2 tbsp fresh chives, minced

Directions:

1) preheat oven to 325°F

2) in a medium bowl, whisk together eggs and cream. Pour into pie shell, and add lobster meat and cheddar. Stir to combine.

3) bake on the bottom rack for 45 minutes or until eggs are set. Remove and add lobster claws and garnish with chives.

4) serve with hollandaise and enjoy!
